The newest commercial addition to Tallahassee's South Monroe Street - or "So Mo" corridor - opened for the first time over the weekend. Despite very low key advance notice, hundreds of people at the soft opening of the Proof Brewing Company.
Proof owners Bryron Burroughs and his wife Angela were a bit stunned by the crowds. And Bryon called the massive remodeling of the 34,000 thousand square foot building, that used to be the regional Coca-Cola bottling works, near miraculous.
"We built it in under 8 months, which was kind of an impossible task as we not only built a new facility, but we relocated an existing and operating brewing operation without losing supply to the market and got open on time," he marveled.
This Friday, Feb. 8, the new Proof holds its official grand opening with full food and drink service, including a complete line of on-site brewed beers.
